  • Galangal is ginger’s more citrusy cousin, a rhizome used often in Asian, Southeast Asian, and Indian cooking. It’s peppery and spicy.
  • Soak in water for 20mins till it softens and crush well (like garlic) before use. This will extract all the juices from the galangal. Add this juice and the pieces (if you wish) into your dish to further infuse in the sauce.
